Yes, my friends, we're talking about breakfast food (namely pancakes) today on the blog. I love making breakfast! (You may remember I owned and operated a Bed and Breakfast in St. Marys from 2008 to 2013.) I have been intending to share this Homemade Pancake Mix recipe with you for YEARS. I'm not sure what's taken me so long.
When I ran the B&B, pancakes were on the breakfast rotation. Having a homemade dry pancake mix to use made those mornings just a little bit easier. This is that pancake mix recipe. - I guess you could say it's been Bed & Breakfast tested and approved.
What I love about this recipe is that you can mix up a big batch, and then you only need to mix it into your wet ingredients whenever the craving for pancakes strikes.
Once the batter is prepared, you can customize it any way you like. Toss in blueberries, add chocolate chips, stir in peanut butter,.... The possibilities are almost endless.
What is Pancake Mix Made of?
If you've never made pancake mix, you might be surprised to learn that you probably already have all the ingredients. Pancake Mix is made with pantry staples and can be put together in minutes.
To make this dry pancake mix, you will need:
- all-purpose flour
- sugar
- baking powder
- baking soda
- salt
Yes. It's that simple.
How to Make Homemade Pancake Mix:
Just grab a big jar, toss in these ingredients, whisk to combine, and your pancake mix is ready! (You will find the full ingredient list and amounts in the printable recipe card below.)
That's it. Really. This mixture can be stored in an airtight container on your counter or in a cabinet for up to three months.
How to Make Pancakes from Pancake Mix:
Once the dry mix is prepared, you'll need to add a few wet ingredients to make a batter. For this, you will need:
- buttermilk
- milk
- egg
- butter
- vanilla extract
Exact amounts are listed below. Other than the buttermilk, it's likely you also have most of these items in your refrigerator or pantry. (Side note: You can make buttermilk at home. Just add 1 tablespoon white vinegar OR 1 tablespoon fresh lemon juice to 1 cup of milk. Stir to combine.)
To make the batter, whisk together all the wet ingredients and then add the prepared dry ingredients. It's that simple. Your pancake batter is ready to go.
When I make pancakes, I like to use a cast iron griddle on my stovetop. (This is the one I have.) However, an electric griddle or even a nonstick pan works equally well.
I add a little butter to the griddle and then remove any excess with a paper towel. Once the griddle is hot, it's time to make the pancakes.
Tip: After pouring the batter on the hot griddle, I let the pancake cook for 4-5 minutes before flipping it. I know it's time to flip the pancake when I see lots of bubbles on the top of it.
How to Serve Pancakes:
This pancake mix will give you delicious, fluffy pancakes. To finish them off, I highly recommend a pat of butter and a generous amount of pure maple syrup. (Avoid the "maple-flavored" syrup you find at the grocery store.)

Homemade Pancake Mix

Dry Mix:
- 3 1/2 cups flour
- 1/3 cup sugar
- 4 teaspoons baking powder
- 2 teaspoons baking soda
- 1 teaspoon salt
Wet Mix:
- 1/2 cup buttermilk
- 1/2 cup milk
- 1 egg
- 1 tablespoon melted butter
- 1/2 teaspoon vanilla extract
- To prepare the pancake mix, add the flour, sugar, baking powder, baking soda, and salt to a large jar or container. Use a whisk to thoroughly combine all the ingredients. This pancake mix can be stored for up to three months.
- To prepare the pancake batter, add the buttermilk, milk, egg, melted butter, and vanilla extract to a medium bowl. Whisk together to combine. Add 1 cup of the prepared dry mix. Stir until just combined. Let the mixture sit for1-2 minutes before cooking.
- Set your griddle on medium-low heat. Brush with butter. Allow the butter to melt. (Optional: Remove any excess butter with a paper towel.)
- Pour 1/4 cup* of the batter onto the hot buttered griddle. Cook the pancake until bubbles form on the top and the bottom is golden. (This will take bout 4-5 minutes.) Flip the pancakes and cook about 2 more minutes until golden.
- Serve with butter and pure maple syrup.
- This recipe will make 10 pancakes with dry mix left over.
*1/4 cup of batter makes a 3-inch pancake. You can create a larger or smaller pancake by adjusting the amount of batter you use.
